Our so-called socca experiment


We made socca the other day. A very thick and slightly-less-salted-than-it-should-have-been version of socca, but this was our first effort so we were very happy. Socca is a Nice specialty that's made out of chickpea flour, baked and then salted and peppered. It ends up being somewhat of a savory pancake -- although ours looks more like a bread.
