Our so-called socca experiment

We made socca the other day. A very thick and slightly-less-salted-than-it-should-have-been version of socca, but this was our first effort so we were very happy. Socca is a Nice specialty that's made out of chickpea flour, baked and then salted and peppered. It ends up being somewhat of a savory pancake -- although ours looks more like a bread.

I'll post a few more slides in the sidebar.

  1. Kerry: Thanks for the slideshow. It looks quite yummy! Sure, please send along the receipe if you have it handy. Let me hunt for the flour and see if I can make it work!

BTW, have you tried the tortiere (from Quebec)?
